So does this figure separate into HyouRyuu and EnRyuu? I haven't seen a single picture of them so I am guessing no, but that would be super disappointing if it didn't.

Yeah, it separates. As a consolation prize, check out this close-up pic of Choryujin's crotch. (But not in a creepy way.)
All other contestants will take home the board game edition.

I think it splits in half just in case Bandai releases a Gekiryujin but I don't think each half transforms. If it did it would be one hell of a feat and a bunch of parts forming would be needed to make it look half decent.

I would say it's more likely that it transforms like the minipla with the legs encased in a shell.

Yeah I cannot help but a 3rd Party company would have made a more perfect transformation version of the character minimizing any if even all partsforming.
Granted the legs of Houryu and Enryu would be a challenge as those make up the shoulders of Chouryujin.
That specific part of the figure caused me a lot of trouble to engineer. And that is not including any abdominal movement for the combined mecha.
