I noticed from this or other forums that some people are able to determine the amount of stock of items left in online stores such as bbts or tfsource. Does anybody know how this is done?

Yes. Add a ludicrously high number of items to your cart. Say ... 9,999 pieces of something. A lot of cart software will default you down to the actual available quantity when you overshoot the total available inventory, thus kicking you down to that amount.
* Please note that this will ONLY tell you the available quantity that's been programmed into the cart software. This is not always the actual available quantity (especially with pre-order items, where the person entering the information will just put a random large number to make sure that it doesn't sell out) in a store or distributor's inventory.
