I never had a ton of games for this, but certainly Halo/halo2 are musts for FPS games.
I also enjoyed Mechassault 1 & 2 - lot of action that keeps you interested - and hey it's mechs, so whats not to love.
I wasn't into the sports games and the only racing one I had was Project Gotham - its fun with 2 people, but as those gatherings were few for me (and certainly my wife got tired of it after a couple of days), it basically got shelved.

My own recommendation -
Ninja Gaiden Black. For when you absolutely, positively, have to put your every nerve on edge and be so utterly crushed by videogame difficulty but can't make yourself angry at the game itself because it's not cheating. Side note - you find yourself loving it despite all of the above, mysteriously.
Beyond Good and Evil, if you haven't played it on another console or PC, is a must as well. One of the best games in recent history.
Likewise, Psychonauts. Fantastic game from the always-brilliant Tim Schafer.
Panzer Dragoon Orta is a pretty good game (with an emphasis on "pretty". It's a VERY nice looking game.), but has the limitations of being an on-rails shooter to contend with - that is that you WILL finish the game pretty quickly, and once you're done there's not much to do other than play it over again and again.
Jade Empire is a great Bioware RPG, that I think wasn't released outside of the Xbox (was it?) and thus should be a must-get.
For what it's worth, I really enjoyed Black for being a fairly well put together and gleefully destructive shooter. Everything explodes in Black. Everything explodes gloriously.
For a change of pace and a unique experience, you could also check out either of the Kingdom Under Fire games, which are xbox exclusives and combine the 1 vs. 1000 combat of Dynasty Warriors with actual Real Time Strategy tactics. Pretty neat.

Dead or Alive 3 for fighting game. It was the first major clean up of the graphics after DOA2 on PS2 (which was good already, but the XBOX arguably had better graphics for that sort of thing).
And I second Ninja Gaiden Black (but the plain vanilla version is also okay too if you can't find Black - they're the same game only Black had the add-on bonuses released first on xbox-live).
The old Splinter Cell games were pretty cool. You'd be surprised how well they pulled off stealth-action despite the limitations of the xbox hardware (you will notice in the early games lots of levels were designed around enclosed spaces like small court yards or inside buildings, never large expansive environments; a clever cheat to squeeze in lots of detail but keeping everything in small areas).

NG Black also has some slight tweaks to the main game that make it totally different from vanilla NG on higher difficulties. I've beaten the original XBOX Ninja Gaiden on "very hard" difficulty - I don't know if I would try to do the same with NG Black, let alone "Master Ninja" difficulty.
Splinter Cell: Chaos Theory is also excellent.

I'll second Coldiron's suggestion of Oddworld: Stranger's Wrath. I never had an XBOX, but I remember playing it and thinking it was pretty good. I just did a quick review check, and it looks like I'm not remembering wrong. I'm surprised it isn't on those lists.

Thanks for all the suggestions. I already have a number of these coming in the mail. The only problem is that I hooked up the xbox and found its not functional! Guess I should have done that first. Now I'm also waiting for a used XBox too.
