I have seen a lot of different types of the RX-78-2 on ebay and other model galleries and was wondering how to tell them apart.
Are there different version numbers or something? Most of the ones I saw were all called RX-78-2 but one was called Ver. Ka (Ver=Version?). I was looking on my RX-78-2's box but there was no version number or anything to distinguish it from others.

There are about a billion different types of RX-78-2 products. The first thing you should do is narrow down what kind of product it is, whether a model kit or whatever. I'm assuming you mean model kit, in which case, there are still a ton. You can then narrow it down by scale (1/144, 1/100, or 1/60) or grade (High grade [HG], Master grade [MG], or Perfect Grade [PG]). Perfect grades are always 1/60 scale, and master grades are always 1/100. There are 4 MG version of the RX-78-2, version 1, version 1.5, version Ka, and the OYW version. Version 1.5 has some slight improvements, version Ka was given a more modern redesign, and version OYW is based of a PS2 game color scheme and has improved joints. The OYW version is probably the best version, as it's the newest. There are also many high grade versions, as well as tons of pre-assembled toys/collectibles.

Thanks that was exactly what I was talking about (MG model kits), sorry for not being more specific.
But do they have "Ver 1.5", "Ver OYW" labeled on the box, because my Ver 1 (I'm asuming) doesn't have anything on the box saying what version it is. Is that just because it was the first made?

Most likely that is the case, Gundam RX-78-2 as you already know is the one that started it all and for one reason or another he always get revived. KA ver. 1.5. KA stands for Hajime Katoki and this is the revised version from the one you have. The KA was supposed to be a 10th anniversary design and since Katoki designed it, it gets his name or at least an abbreviated version of it.
The break down is:
RX-78-1 is the original gundam that was painted white with red stripes. Was destroyed by Zeon spies. RX-78-2 is the one we can see in action in Mobile Suite 0079. Piloted by Amuro Rey RX-78-3 is fitted with Magnet Coating technology in order to improve response times and utilize Newtype technology, which RX-78-2 was lacking. RX-78-4 is the NT-1 Alex Gundam 0080: War in the Pocket..."Can you see that you are free..."

There are 4 different versions of MG RX-78-2, as follows:
Version 1 - No specific label. Version 2 - Has "Ver. 1.5" under the MG logo. (Top-right corner) Version Ka-The name of this MS is actually "Gundam Ver. Ka". Also has "Ver.Ka" under the MG logo. Version OYW - Has "Ver. One Year War 0079" at the bottom-left corner.
Hope this helps!
